Remove from heat; let cool slightly.(The filling may be made up to 1 day ahead cooled completely then covered and refrigerated.) On a lightly floured surface roll each ball of dough into an 8-inch circle about 1/8 inch thick. Place half of the filling on one side of each circle leaving a 1/2-inch border around edge; brush border with some of the beaten egg white if desired.
